“As a chef, I’m a very visual person who enjoys creating in the moment,” Chef Allen explains. “I’m not one to scribble notes on a piece of paper for my next menu. I create dishes for our guests by seeing, tasting, feeling and visualizing the ingredients that our local growers are putting their heart and soul into. From here is where a dish comes to life.”
